What is actual food cost in a restaurant?

Actual food cost measures the food your restaurant consumed during a specific period. Beginning inventory + net food purchases − ending inventory gives food COGS (cost of goods sold). Dividing food COGS by food sales gives actual food-cost percentage. Comparing it with your own target can point to purchasing, waste, inventory, portioning or other operational issues, but it does not identify the cause by itself.

What does actual food cost include?

Actual food cost measures the food used during a period, not only what was purchased. Beginning inventory and purchases represent the food available. Subtracting ending inventory leaves the food consumed through sales, waste, spoilage, comps, employee meals, and other usage.
