What is sales per labor hour in a restaurant?

Sales per labor hour, or SPLH, measures how much net sales a restaurant generates for each labor hour worked. Divide net sales by total labor hours for the same shift, daypart, day or other period. Front-of-house (FOH) and back-of-house (BOH) figures, if entered, divide the same total sales by each department’s hours. These comparisons describe staffing productivity; they are not department revenue and should not be added together. Labor percentage is labor dollars divided by net sales. Include the same payroll costs and time period in each comparison.

There is no universal target. Service model, average check, cuisine, daypart, staffing, volume and location all matter. Set a target based on your restaurant’s history and service standards.
